Artichoke tapenade
Recipe
2 cans of artichoke hearts drained and chopped coarsely
2 oz capers chopped
2 oz dice onions
1 oz chopped parsley
2 oz mince garlic
1 oz good olive oil
Salt and pepper to taste
Method
Combine the above ingredients in a bowl and mix well
Allow to sit for 30 minutes for the flavours to develop
Spoon over toasted French bread garnished with shard of parmesan cheese
