Fresh Olivada Bruschetta
Recipe
1 lbs mixed olives pitted and chopped
1 tablespoon thyme and rosemary chopped
1 tablespoon chopped Italian parsley
1 tablespoon chopped capers
2 cloves chopped garlic
Zest of 1 lemon and 1 orange
Pinch of red chili flakes
2 anchovies minced
¼ cup unfiltered olive oil
Pinch of cracked black pepper
Method
Combine the above ingredients and allow sitting for 30 minutes before serving
Spoon over toasted French bread garnished with twist of orange zest
