  • Prosciutto with Aged Cheddar and Scallions

    Recipe

    4 oz of finely sliced prosciutto cut into thin julienne strips
    8 oz of grated 3 – 4 year old white cheddar
    3 tablespoons of fine minced scallions
    3 oz of minced red onions
    2 tablespoons chopped Italian parsley
    4 oz of good mayonnaise or aioli
    Cracked black pepper to taste

    Method

    Combine the above ingredients and mix well
    Season with cracked black pepper
    Chill for 1 hour before serving
    Serve on your favorite cracker of crostini
