Summer Grilled Vegetable Pasta

Stuffed Pasta Shells, Fresh Lemon, Niagara Ricotta, Kingsville Cherry Tomato Ragu, Slegers Herb Salad

Plate Setup

4 pc    stuffed pasta shells (filling: ricotta, roasted garlic, grilled eggplant, grilled peppers, grilled red onions, grilled zucchini, chopped herbs)
4 oz    cherry tomato ragu
6 pc    dried cherry tomatoes
2 oz    ricotta cheese
½  pc  lemon, zest of
½ oz   extra virgin olive oil
½ oz   parsley, chopped
Baby herb greens

Cherry Tomato Ragu - Ingredients

3 pc             onion, white, small dice
5 cloves    garlic, pureed
¼ cup          olive oil
½  tsp          chili, minced
3 lbs            cherry tomatoes, halved
1 cup            tomato puree
T.T                salt
T.T                black pepper, ground


Heat the oil over medium-high heat
Add onion and sauté until translucent
Add garlic and chili flakes and sauté for another minute
Add cherry tomatoes and tomato puree
Bring to simmer
Let cherry tomatoes cook down to a rustic style ragu
Adjust seasoning
