Sauces for Seafood Platter

Seafood platter from 360 Restaurant that includes lobster, crab, oysters and mussels

Cocktail Sauce

Ingredients

1 ½ cup / 300 ml ketchup
¼ cup / 57 gm drained horseradish
1 tbsp / 7.5 ml brandy
1 drop Lea & Perrins sauce
1 drop Tabasco sauce
½ lemon (juiced)

Method

Combine the ingredients and mix well. Adjust the seasoning. Reserve in the fridge for serving.

Marie Rose Sauce

Ingredients

1 ¾ cups / 400 ml of mayonnaise
10 tbsp / 150 ml ketchup
2 tbsp / 15 ml brandy
1 drop Lea & Perrins sauce
1 drop Tabasco sauce

Method

Combine the ingredients and mix well. Adjust the seasoning. Reserve in the fridge for serving.
